These spicy honey beef meatballs definitely fall into the second category.

How to Make Spicy Honey Beef Meatballs

1. Make the meatball mixture

Add the ground beef, breadcrumbs, egg, garlic, cilantro, chili powder, smoked paprika, cumin, salt, black pepper, and red pepper flakes to a large bowl.

Mix gently with your hands or a fork until everything is just combined.

Try not to overmix. That’s one little trick I’ve learned over the years—if you work the meat too much, the meatballs can turn out dense instead of tender.

2. Shape the meatballs

Roll the mixture into small meatballs, roughly 1½ inches wide.

You should get around 18–20 meatballs, depending on the size.

3. Cook the meatballs

Heat a large skillet over medium heat with a small drizzle of oil.

Add the meatballs in a single layer, working in batches if necessary.

You can also bake them at 400°F (200°C) for about 15–18 minutes.

4. Make the honey glaze

While the meatballs are cooking, whisk together the honey, soy sauce, lime juice, hot sauce, chili garlic sauce, garlic, and smoked paprika.

The first time I made this glaze, I tasted it straight from the bowl and immediately knew I was going to need extra. It’s sweet, spicy, tangy, and just a little smoky.

5. Glaze the meatballs

Once the meatballs are cooked, reduce the skillet heat to low.

Pour the honey mixture over the meatballs and gently toss them until they’re coated.

Let everything simmer for 2–3 minutes, turning the meatballs occasionally.

The glaze will become glossy and sticky as it cooks.

Don’t walk away at this point—the honey can caramelize quickly.

6. Make the cilantro lime sauce

Add the Greek yogurt or sour cream, cilantro, lime juice, garlic, salt, and a tablespoon of water to a blender or food processor.

Blend until smooth.

Add another splash of water if you want a thinner sauce.

Taste and adjust the lime, salt, or cilantro to your liking.

7. Serve

Arrange the hot honey-glazed meatballs on a serving plate.

Drizzle with cilantro lime sauce or serve the sauce on the side for dipping.

Finish with extra chopped cilantro and a little lime zest if you like.

And then try to get one before everyone else does!

My Favorite Way to Serve Them

For dinner, I love serving these meatballs over fluffy white rice with sliced avocado and a simple cucumber salad.

For a party, I put them on a platter with toothpicks and a bowl of cilantro lime sauce in the middle.

They also make fantastic tacos. Tuck a few meatballs into warm tortillas, add shredded cabbage, cilantro, a squeeze of lime, and plenty of that sauce.

It’s messy.

It’s delicious.

And nobody seems to mind.

Tips for the Best Meatballs

Don’t overmix the beef. Gently combine the ingredients for tender meatballs.

Keep the meatballs similar in size. This helps them cook evenly.

Watch the glaze carefully. Honey can burn if the heat is too high.

Adjust the heat to your taste. For a milder version, reduce the hot sauce and red pepper flakes. Want more heat? Add extra chili garlic sauce or a pinch of cayenne.

Use fresh lime juice. It makes a noticeable difference in the cilantro lime sauce.

Taste the sauce before serving. A little extra lime or salt can completely change the balance.

Can I Make These Ahead?

Absolutely.

You can shape the meatballs a day ahead and keep them covered in the refrigerator until you’re ready to cook.

The cilantro lime sauce can also be prepared ahead and refrigerated.

If you’re making these for a party, I actually recommend doing most of the prep earlier in the day. Then you can cook and glaze the meatballs just before serving.

Easy Variations

Extra Spicy

Add cayenne pepper to the meatball mixture and use extra sriracha in the honey glaze.

Mild and Family-Friendly

Skip the red pepper flakes and reduce the hot sauce. The honey glaze will still give you plenty of flavor.

Chicken Meatballs

Ground chicken works beautifully in place of beef. Just make sure the meatballs are cooked through.

Make Them a Bowl

Serve over rice with avocado, cucumber, shredded cabbage, cilantro, and lime.
