For the Pork Chops

  • 4 bone-in or boneless pork chops, about ¾–1 inch thick
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons all-purpose flour, optional
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Creamy Mushroom Sauce

  • 250–300 g mushrooms, sliced
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon paprika
  • 1 teaspoon Dijon mustard, optional
  • ½ cup grated Parmesan cheese, optional
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped

For the Mashed Potatoes

  • 1 kg potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • ½–¾ cup warm milk
  • 2–3 tablespoons heavy cream, optional
  • ½ teaspoon salt, plus more for boiling
  • ¼ teaspoon black pepper
  • 2 cloves garlic, optional
  • 2 tablespoons cream cheese, optional

1. Prepare the Potatoes

Place the peeled and chopped potatoes in a large pot. Cover them completely with cold water.

Add about 1 teaspoon of salt to the water.

If you want garlic-flavored mashed potatoes, add 2 peeled garlic cloves to the pot.

Bring the water to a boil, then reduce the heat slightly and cook for approximately 15–20 minutes, or until the potatoes are completely tender when pierced with a fork.

While the potatoes cook, start preparing the pork chops.

When the potatoes are done, drain them very well. Remove the garlic cloves if you used them.

Return the potatoes to the warm pot and allow them to sit for 1–2 minutes so excess moisture can evaporate.

Add the butter and begin mashing.

Gradually add the warm milk, mixing until the potatoes reach your preferred consistency.

For extra-rich mashed potatoes, add a few tablespoons of heavy cream and cream cheese.

Season with salt and black pepper.

Tip: Don’t overmix the potatoes. Excessive mixing can make mashed potatoes gluey rather than fluffy.

Cover and keep warm while you prepare the pork.

2. Season the Pork Chops

Pat the pork chops dry with paper towels. This is important because dry pork will brown much better in the pan.

In a small bowl, combine:

  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Onion powder

Rub the seasoning evenly over both sides of the pork chops.

For a slightly thicker crust, lightly coat each pork chop with flour and shake off the excess.

The flour is optional, but it helps create a beautiful golden crust and also gives the eventual mushroom sauce something to cling to.

3. Sear the Pork Chops

Heat a large heavy skillet over medium-high heat.

Add the olive oil and allow it to become hot.

Place the seasoned pork chops into the pan without overcrowding them.

Cook for approximately 3–5 minutes on the first side, depending on thickness.

Flip and cook another 3–5 minutes on the other side.

Add the butter during the final minute and spoon the melted butter over the pork chops.

You want the outside to become deeply golden brown.

The pork does not necessarily need to be completely finished at this stage because it will return to the pan later with the sauce.

Transfer the pork chops to a plate and loosely cover them with foil.

Important: Cooking time varies significantly depending on the thickness of the pork. For food safety, pork should reach an internal temperature of 145°F / 63°C, followed by at least a 3-minute rest.

4. Cook the Mushrooms

Don’t clean the skillet after removing the pork. Those browned bits at the bottom contain a lot of flavor.

Reduce the heat to medium.

Add 1 tablespoon olive oil and 2 tablespoons butter.

Add the sliced mushrooms.

Cook for approximately 5–7 minutes, stirring occasionally.

At first, the mushrooms will release quite a bit of moisture. Continue cooking until most of that moisture evaporates and the mushrooms become golden brown.

Don’t constantly stir them. Allowing them to sit against the hot pan helps them develop a much better flavor.

5. Add the Onion and Garlic

Add the finely chopped onion to the mushrooms.

Cook for approximately 2–3 minutes, until the onion becomes soft and translucent.

Add the minced garlic.

Cook for another 30–60 seconds.

Be careful not to burn the garlic.

Add the dried thyme, dried parsley, and paprika.

Stir everything together.

6. Deglaze the Pan

Pour in the chicken broth.

Immediately scrape the bottom of the pan with a wooden spoon or spatula.

This loosens all the caramelized pork and mushroom bits stuck to the skillet and incorporates them into the sauce.

Allow the broth to simmer for about 2–3 minutes.

If you’re using Dijon mustard, stir it in now.

The mustard doesn’t make the sauce taste strongly like mustard; instead, it adds a subtle tanginess that balances the richness of the cream.

7. Make the Creamy Mushroom Sauce

Reduce the heat to medium-low.

Slowly pour in the heavy cream while stirring.

Add:

  • Black pepper
  • A little salt, if needed
  • Parmesan cheese, if using

Stir gently until everything is combined.

Allow the sauce to simmer for approximately 3–5 minutes.

Do not boil it aggressively. A gentle simmer will thicken the sauce while keeping the cream smooth.

The sauce should become rich and creamy enough to coat the back of a spoon.

If it becomes too thick, add a splash of chicken broth or milk.

If it’s too thin, continue simmering for another few minutes.

8. Return the Pork Chops to the Sauce

Place the seared pork chops back into the skillet.

Spoon the mushroom sauce over the top.

Reduce the heat to low.

Cover the skillet loosely and cook for approximately 3–6 minutes, depending on the thickness of the pork chops.

Check the internal temperature with a meat thermometer.

Once the pork reaches 145°F / 63°C, remove it from the heat and allow it to rest for at least 3 minutes.

During this time, the sauce will also continue to thicken slightly.

9. Taste and Adjust the Sauce

Before serving, taste the creamy mushroom sauce.

Adjust the seasoning as needed.

You can add:

  • More black pepper for a stronger flavor
  • A little salt if needed
  • More Parmesan for extra richness
  • A small squeeze of lemon juice for brightness
  • A splash of broth if the sauce is too thick
  • A little cream if you want it richer

Finish with freshly chopped parsley.

10. Assemble the Plate

Spoon a generous portion of mashed potatoes onto each plate.

Place one pork chop beside or partially on top of the potatoes.

Spoon plenty of creamy mushroom sauce over the pork.

Make sure each serving gets plenty of mushrooms.

Finish with freshly chopped parsley and a little freshly cracked black pepper.

For a restaurant-style presentation, you can drizzle a small amount of the sauce around the mashed potatoes rather than covering everything completely.

Optional Flavor Additions

For a Garlic Mushroom Sauce

Add another 1–2 cloves of minced garlic along with the original garlic.

For a Spicy Version

Add:

  • ¼–½ teaspoon red pepper flakes
  • A pinch of cayenne pepper

For Extra Cheese

Add ½ cup Parmesan to the sauce toward the end of cooking.

For a Deeper Mushroom Flavor

Use a mixture of mushrooms such as:

  • Cremini
  • Button
  • Portobello
  • Shiitake

For a More Luxurious Sauce

Replace ¼ cup of the chicken broth with additional heavy cream.

For a Fresh Finish

Add a small squeeze of lemon juice just before serving. It helps cut through the richness of the cream and butter.

Helpful Tips for Perfect Pork Chops

Don’t put cold, wet pork directly into the pan. Pat it dry first.

Don’t overcrowd the skillet. If the pork chops are packed together, they will steam instead of sear.

Get the pan hot before adding the pork. This helps create the golden-brown crust.

Don’t overcook the pork. A meat thermometer is much more reliable than cooking strictly by time.

Let the pork rest. Resting allows the juices to redistribute and keeps the meat more tender.

Brown the mushrooms properly. Give them enough time to release their water and caramelize.

Keep the cream sauce at a gentle simmer. High heat can cause a cream-based sauce to become grainy or separate.

Make-Ahead Option

You can prepare the mashed potatoes several hours ahead of time.

Store them covered in the refrigerator and gently reheat them with a splash of milk and a little butter.

The pork and mushroom sauce are best prepared shortly before serving, but leftovers can be refrigerated in an airtight container for about 3–4 days.

When reheating, use low to medium-low heat and add a splash of milk, broth, or cream to loosen the sauce.

What to Serve With It

This dish is already quite hearty, but it pairs especially well with something fresh or green, such as:

  • Steamed broccoli
  • Green beans
  • Roasted asparagus
  • Sautéed spinach
  • A simple green salad
  • Roasted carrots

A crisp salad with a slightly acidic dressing is particularly good because it balances the rich mushroom cream sauce.

Final Result

You should end up with tender, golden-brown pork chops covered in a creamy garlic mushroom sauce, with earthy mushrooms throughout and smooth, buttery mashed potatoes underneath. The combination of the savory pan juices, cream, garlic, herbs, and potatoes makes this a particularly satisfying comfort-food dinner.
