These Taco Shrimp Lettuce Boats are a fresh, low-carb twist on classic tacos. Juicy, seasoned shrimp are tucked into crisp lettuce leaves and topped with creamy avocado, crunchy vegetables, and a zesty lime crema. They’re perfect for a quick lunch, healthy dinner, or party appetizer.

Ingredients

For the Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Juice of ½ lime

For the Lettuce Boats

  • 8 large romaine, butter lettuce, or iceberg lettuce leaves
  • 1 cup cherry tomatoes, diced
  • 1 avocado, diced
  • ¼ cup red onion, finely diced
  • ¼ cup corn kernels (optional)
  • ¼ cup shredded purple cabbage
  • 2 tbsp chopped fresh cilantro
  • Lime wedges, for serving

Lime Crema

  • ½ cup plain Greek yogurt or sour cream
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 small garlic clove, minced
  • 1 tbsp chopped cilantro
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Crema
    • In a small bowl, whisk together the Greek yogurt, lime juice, lime zest, garlic, cilantro, salt, and pepper. Refrigerate until ready to serve.
  2. Season the Shrimp
    • Pat the shrimp dry with paper towels.
    • Toss with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne (if using), salt, pepper, and lime juice.
  3. Cook the Shrimp
    • Heat a large skillet over medium-high heat.
    • Cook the shrimp for 2–3 minutes per side, until pink and opaque. Remove from the heat.
  4. Assemble the Lettuce Boats
    • Arrange the lettuce leaves on a serving platter.
    • Fill each leaf with shredded cabbage, cooked shrimp, tomatoes, avocado, red onion, and corn if using.
    • Drizzle with the lime crema and sprinkle with chopped cilantro.
  5. Serve
    • Garnish with lime wedges and serve immediately.
