Sautéed Zucchini, Mushrooms & Onions

A quick, healthy, and flavorful side dish that’s ready in 20 minutes. Perfect with grilled chicken, steak, fish, or served over rice or quinoa.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 medium zucchini, sliced into half-moons
  • 8 oz (225 g) mushrooms, sliced
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onions and cook for 3–4 minutes until softened.
  3. Stir in the mushrooms and cook for 4–5 minutes until they release their moisture and begin to brown.
  4. Add the zucchini and cook for another 4–5 minutes, stirring occasionally, until tender-crisp.
  5. Add the garlic, Italian seasoning, paprika, oregano, salt, and black pepper. Cook for 1 minute until fragrant.
  6. Remove from the heat and stir in the lemon juice.
  7. Garnish with fresh parsley and Parmesan cheese, if desired.
