Sautéed Zucchini, Mushrooms & Onions
A quick, healthy, and flavorful side dish that’s ready in 20 minutes. Perfect with grilled chicken, steak, fish, or served over rice or quinoa.

Ingredients
- 2 tbsp extra virgin olive oil
- 2 medium zucchini, sliced into half-moons
- 8 oz (225 g) mushrooms, sliced
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp dried oregano
- Salt and black pepper, to taste
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onions and cook for 3–4 minutes until softened.
- Stir in the mushrooms and cook for 4–5 minutes until they release their moisture and begin to brown.
- Add the zucchini and cook for another 4–5 minutes, stirring occasionally, until tender-crisp.
- Add the garlic, Italian seasoning, paprika, oregano, salt, and black pepper. Cook for 1 minute until fragrant.
- Remove from the heat and stir in the lemon juice.
- Garnish with fresh parsley and Parmesan cheese, if desired.
