Ingredients
- 1 can (15 oz/425 g) chickpeas, drained and rinsed
- 1 can (15 oz/425 g) cannellini beans, drained and rinsed
- 1 can (15 oz/425 g) kidney beans, drained and rinsed
- 1 English cucumber, diced
- 1½ cups cherry tomatoes, halved
- 1 red bell pepper, diced
- ¼ red onion, finely diced
- ½ cup Kalamata olives, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped (optional)
Lemon Dressing
- ¼ cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- In a large bowl, combine the chickpeas, cannellini beans, kidney beans, cucumber, tomatoes, bell pepper, red onion, olives, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Fold in the feta cheese.
- Refrigerate for 20–30 minutes before serving to allow the flavours to develop.
