Ingredients

  • 4 large flour tortillas
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese (optional)
  • 24–30 pepperoni slices
  • ½ cup pizza sauce, plus extra for dipping
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 tablespoons butter or olive oil

Optional Toppings

  • Sliced black olives
  • Diced bell peppers
  • Sliced mushrooms
  • Red onion
  • Crushed red pepper flakes
  • Fresh basil

Instructions

  1. Spread 2 tablespoons of pizza sauce over half of each tortilla.
  2. Sprinkle mozzarella and cheddar evenly over the sauce.
  3. Arrange the pepperoni slices on top and sprinkle with Italian seasoning and garlic powder.
  4. Add any optional toppings if desired.
  5. Fold each tortilla in half to make a half-moon.
  6. Heat a large skillet over medium heat and lightly coat with butter or olive oil.
  7. Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is melted.
  8. Transfer to a cutting board and let rest for 1 minute.
  9. Slice into wedges and serve with warm pizza sauce for dipping.
