Baked Garlic Parmesan Chicken with Zucchini & Cherry Tomatoes
Ingredients
- 4 boneless, skinless chicken breasts (or 6 chicken thighs)
- 2 medium zucchini, sliced into ¼-inch rounds
- 2 cups cherry tomatoes
- 1½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp black pepper
- 1 tsp salt
- ½ tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley or basil
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- In a small bowl, combine:
- Olive oil
- Garlic
- Italian seasoning
- Paprika
- Onion powder
- Salt
- Black pepper
- Red pepper flakes (if using)
- Arrange the chicken in the baking dish. Add the zucchini slices and cherry tomatoes around the chicken.
- Brush the garlic seasoning mixture over the chicken and vegetables, coating everything evenly.
- Bake for 20 minutes.
- Remove the dish from the oven and sprinkle the mozzarella and Parmesan evenly over the chicken.
- Return to the oven and bake for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and golden.
- For a browned cheesy top, broil for 2–3 minutes.
- Garnish with fresh parsley or basil before serving.
