Ingredients
For the Shrimp
- 1 lb (450 g) large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Juice of ½ lime
For the Lettuce Boats
- 8 large romaine, butter lettuce, or iceberg lettuce leaves
- 1 cup cherry tomatoes, diced
- 1 avocado, diced
- ¼ cup red onion, finely diced
- ¼ cup corn kernels (optional)
- ¼ cup shredded purple cabbage
- 2 tbsp chopped fresh cilantro
- Lime wedges, for serving
Lime Crema
- ½ cup plain Greek yogurt or sour cream
- 1 tbsp fresh lime juice
- 1 tsp lime zest
- 1 small garlic clove, minced
- 1 tbsp chopped cilantro
- Salt and black pepper, to taste
Instructions
- Prepare the Crema
- In a small bowl, whisk together the Greek yogurt, lime juice, lime zest, garlic, cilantro, salt, and pepper. Refrigerate until ready to serve.
- Season the Shrimp
- Pat the shrimp dry with paper towels.
- Toss with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne (if using), salt, pepper, and lime juice.
- Cook the Shrimp
- Heat a large skillet over medium-high heat.
- Cook the shrimp for 2–3 minutes per side, until pink and opaque. Remove from the heat.
- Assemble the Lettuce Boats
- Arrange the lettuce leaves on a serving platter.
- Fill each leaf with shredded cabbage, cooked shrimp, tomatoes, avocado, red onion, and corn if using.
- Drizzle with the lime crema and sprinkle with chopped cilantro.
