Ingredients
- 4 bell peppers, halved and seeded
- 1 lb (450 g) lean ground beef or turkey
- 1 packet taco seasoning (or 2 tablespoons homemade)
- ½ cup salsa
- 1 cup cooked rice
- 1 cup shredded cheddar or Mexican cheese blend
- Fresh cilantro or green onions, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cook the ground beef or turkey in a skillet until browned. Drain excess fat.
- Stir in the taco seasoning, salsa, and cooked rice. Cook for 2–3 minutes.
- Place the pepper halves in a baking dish and fill each with the taco mixture.
- Cover with foil and bake for 25 minutes.
- Remove the foil, sprinkle with cheese, and bake for 5 more minutes, until the cheese is melted.
- Garnish with cilantro or green onions and serve.
