Quick Taco Stuffed Peppers

Ingredients

  • 4 bell peppers, halved and seeded
  • 1 lb (450 g) lean ground beef or turkey
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • ½ cup salsa
  • 1 cup cooked rice
  • 1 cup shredded cheddar or Mexican cheese blend
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the ground beef or turkey in a skillet until browned. Drain excess fat.
  3. Stir in the taco seasoning, salsa, and cooked rice. Cook for 2–3 minutes.
  4. Place the pepper halves in a baking dish and fill each with the taco mixture.
  5. Cover with foil and bake for 25 minutes.
  6. Remove the foil, sprinkle with cheese, and bake for 5 more minutes, until the cheese is melted.
  7. Garnish with cilantro or green onions and serve.

Optional Toppings: Sour cream, diced avocado, jalapeños, or crushed tortilla chips.
