Ingredients

  • 2 English cucumbers, diced
  • 3 Roma tomatoes, diced
  • 1 red bell pepper, diced
  • ½ small red onion, finely diced
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped (optional)

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Optional Add-Ins

  • ½ cup crumbled feta cheese
  • ¼ cup sliced Kalamata olives
  • 1 avocado, diced
  • 1 can (15 oz) chickpeas, drained and rinsed

Instructions

  1. In a large bowl, combine the cucumbers, tomatoes, bell pepper, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
  3. Pour the dressing over the vegetables and toss gently until evenly coated.
  4. If using, fold in the feta cheese, olives, avocado, or chickpeas.
  5. Refrigerate for 15–20 minutes before serving to let the flavors meld.

Serving Suggestions

  • Serve as a side with grilled chicken, fish, or lamb.
  • Spoon into pita pockets with hummus.
  • Pair with quinoa, couscous, or grilled halloumi for a light Mediterranean meal.

Tip: For the freshest flavor, prepare the salad just before serving, or add the dressing no more than 30 minutes in advance to keep the vegetables crisp.
