Ingredients
For the Salad:

3 medium beets, washed, trimmed, and peeled

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup feta cheese, cubed or crumbled

1/4 cup fresh mint leaves, roughly chopped

1/4 cup fresh flat-leaf parsley, chopped

For the Lemon-Herb Dressing:

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice
-
1 clove garlic, minced

Salt and freshly cracked black pepper, to taste
Instructions
1. Roast the Beets

Preheat your oven to 400°F (200°C).

Wrap the peeled beets tightly in aluminum foil with a drizzle of olive oil, salt, and pepper.

Roast for 40 to 45 minutes, or until they can be easily pierced with a fork.

Allow them to cool completely, then dice them into bite-sized cubes.
2. Assemble the Base

In a large mixing bowl, combine the diced roasted beets and the rinsed chickpeas.

Gently toss them together so the chickpeas absorb some of the beautiful beet color.
3. Whisk the Dressing

In a small jar or bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, salt, and black pepper until well combined.
4. Toss and Garnish

Pour the dressing over the beet and chickpea mixture, tossing gently to coat.

Fold in the cubed feta cheese, fresh mint, and flat-leaf parsley. Tip: Keep a few cubes of feta and whole herb leaves aside to press on top right before serving so they stay clean and bright!

If you have them, dot the top with edible borage flowers for that exact picture-perfect look.
 Chef’s Tip: If you’re short on time, you can absolutely use pre-cooked, vacuum-packed beets from the grocery store. Just dice them up and you’ll skip the cooking time entirely!
