Fresh Cucumber Lemonade

Ingredients

  • 2 large cucumbers, peeled and chopped
  • 1 cup freshly squeezed lemon juice (about 5–6 lemons)
  • ½ cup honey or granulated sugar (adjust to taste)
  • 4 cups cold water
  • 1 cup ice cubes
  • ¼ cup fresh mint leaves (plus extra for garnish)
  • 1 lemon, thinly sliced
  • 1 cucumber, thinly sliced (for garnish)

Instructions

Step 1: Blend the Cucumbers

  1. Add the chopped cucumbers and 1 cup of water to a blender.
  2. Blend until completely smooth.

Step 2: Strain

  1. Pour the cucumber puree through a fine-mesh strainer into a large pitcher.
  2. Press with the back of a spoon to extract as much juice as possible.

Step 3: Make the Lemonade

  1. Add the fresh lemon juice, honey (or sugar), and the remaining 3 cups of cold water to the pitcher.
  2. Stir until the sweetener is completely dissolved.

Step 4: Chill

  1. Add the ice cubes, mint leaves, lemon slices, and cucumber slices.
  2. Refrigerate for 20–30 minutes for the best flavor.

Step 5: Serve

  1. Stir well before serving.
  2. Pour into glasses filled with ice.
  3. Garnish with extra mint leaves, cucumber ribbons, and lemon slices.
