Fresh Cucumber Lemonade
Ingredients
- 2 large cucumbers, peeled and chopped
- 1 cup freshly squeezed lemon juice (about 5–6 lemons)
- ½ cup honey or granulated sugar (adjust to taste)
- 4 cups cold water
- 1 cup ice cubes
- ¼ cup fresh mint leaves (plus extra for garnish)
- 1 lemon, thinly sliced
- 1 cucumber, thinly sliced (for garnish)
Instructions
Step 1: Blend the Cucumbers
- Add the chopped cucumbers and 1 cup of water to a blender.
- Blend until completely smooth.
Step 2: Strain
- Pour the cucumber puree through a fine-mesh strainer into a large pitcher.
- Press with the back of a spoon to extract as much juice as possible.
Step 3: Make the Lemonade
- Add the fresh lemon juice, honey (or sugar), and the remaining 3 cups of cold water to the pitcher.
- Stir until the sweetener is completely dissolved.
Step 4: Chill
- Add the ice cubes, mint leaves, lemon slices, and cucumber slices.
- Refrigerate for 20–30 minutes for the best flavor.
Step 5: Serve
- Stir well before serving.
- Pour into glasses filled with ice.
- Garnish with extra mint leaves, cucumber ribbons, and lemon slices.
