Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper

Mushroom Gravy

  • 2 tbsp butter
  • 8 oz (225 g) mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme
  • ¼ cup heavy cream (optional, for a creamier gravy)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden. Transfer to a baking dish.
  4. In the same skillet, melt the butter. Add the mushrooms and cook for 5 minutes until browned. Stir in the garlic and cook for 30 seconds.
  5. Sprinkle the flour over the mushrooms and stir for 1 minute.
  6. Gradually whisk in the chicken broth. Add Worcestershire sauce and thyme. Simmer for 3–5 minutes until the gravy thickens. Stir in the heavy cream if using.
  7. Pour the mushroom gravy over the chicken.
  8. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish with fresh parsley and serve hot.
