Chicken Cranberry Pecan Salad
Ingredients
3 cups cooked chicken, shredded
2 celery stalks, diced
½ cup dried cranberries
½ cup pecans, chopped
½ cup mayonnaise
¼ cup Greek yogurt or sour cream (optional)
1 tsp dried parsley
½ tsp garlic powder
Salt and black pepper to taste
1 tsp lemon juice (optional)
Instructions
In a large bowl, combine shredded chicken, celery, cranberries, and pecans.
In a separate bowl, mix mayonnaise, yogurt, parsley, garlic powder, lemon juice, salt, and pepper.
Pour the dressing over the chicken mixture and stir until everything is well coated.
Cover and refrigerate for at least 30 minutes before serving.
Serve on sandwiches, croissants, lettuce wraps, crackers, or as a salad.
